Other options include linguine con vongole with Count Neck clams and a zesty white-wine and tomato sauce; pollo saltimbocca with chicken, sage, and prosciutto in a pinot grigio reduction or Maiale, which features a pork tenderloin stuffed with spinach, olives and currants and a white cream sauce.
